Close to country-like blood sausage, Melsat is a very ancient delicatessen which means « mix ». In fact, it is composed of eggs, bread and seasoned pork meat, then the mixture is put in a gut and cooked in a broth. It tastes particularly good eaten with mushrooms hash.
